2 cans full fat chilled coconut milk
2 tbsp pure vanilla extract
1/3-1/2 cup pure maple syrup or raw honey
3/4 tsp (or to taste) peppermint extract.
1/2 cup pure cacao nibs. (Optional)
Blend all ingredients together except cacao nibs. When it starts to get thick add the nibs.
Follow directions on ice cream maker. We use the quisinart.
